This delightful cheese is a bit like it’s namesake, Mary Rosenblum.  A washed-curd style cheese which has a beautiful soft bodied texture but the flavor isn’t quite what you would expect in a Gouda style cheese. Imagine a nice combination of a colby-jack meets sharp cheddar.  The flavor offers an unexpected zest at the following.  Nothing quite like it.  Sold in wedges of approximately 4 oz.

Caved aged a minimum of 6 months.
